Apparently, I can grow radishes. Now, I’m not claiming to be a great gardener; but my radishes are thriving AND they are delicious! They also have the most beautiful greens on them. When it comes to making the most of our ingredients, we often overlook the leafy greens that come attached to our vegetables. Ingredients
1/2 cup almonds
1 garlic clove
1 lemon zested and juiced
2 cups radish greens
1 cup cilantro
¼ cup dill
4 scallions, cut into thirds
¼ cup olive oil
¼ cup Parmesan cheese
2 tablespoons butter
Kosher salt and black pepper
Instructions
Put the almonds, garlic, lemon zest and juice, radish greens, cilantro, dill, and scallions in a food processor and process into a paste. While it is running on low, slowly pour in the olive oil to help thicken and form a creamy consistency. Add the parmesan cheese and butter and process until smooth. Season the kosher salt and black pepper.
