Ingredients
2 teaspoons cumin
1 teaspoon turmeric
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper
1 teaspoon salt
¼ teaspoon pepper
1–2 tablespoons olive oil
3 pounds Yukon Gold potatoes, quartered lengthwise
½ bunch cilantro, chopped
3 scallions, chopped
Jalapeño Garlic Dipping Sauce
½ cup mayonnaise
¼ cup sour cream
2 garlic cloves, minced
½ teaspoon Dijon mustard
1 lemon juiced
½ jalapeño, minced
¼ bunch cilantro, chopped
2–3 fresh mint leaves, finely chopped
Kosher salt and black pepper
Instructions
Preheat the oven to 425F degrees and line a baking sheet with parchment paper. In a small bowl combine the cumin, turmeric, smoked paprika, garlic powder, onion powder, cayenne, salt, pepper and olive oil.
Add the potatoes and stir gently to coat in the mixture. Spread potatoes in a single layer on your lined baking sheet. Bake for 40 minutes, or until potatoes are nicely browned.
Meanwhile, whisk together the mayo, sour cream, garlic, Dijon mustard, lemon juice, jalapeno, cilantro, mint, and salt and pepper. Taste and adjust seasonings.
When the potatoes are ready, serve, topped with chopped cilantro and scallions and a nice dollop of the sauce for dipping!
