Ingredients
1/3 cup balsamic vinegar
¼ cup olive oil
¼ cup parmesan cheese, grated
1 pint Grape or cherry tomatoes
1 jar, Mixed olives, pitted and drained
1 jar, Roasted red peppers or piquillo peppers, drained
1 jar, small pepperoncini peppers, drained
Marinated mushrooms (opt)
½ lb Prosciutto
½ lb Salami
½ lb Peppered Salami
½ lb Marinated Mozzarella balls, drained

Long Wooden Skewers
Instructions
Make the balsamic sauce by whisking together the balsamic vinegar, olive oil, and parmesan cheese. Set aside.
Assemble the ingredients: Set up an assembly station with the artichoke hearts, olives, mozzarella cheese balls, various meats, and pepperoncinis. I recommend placing each ingredient in separate bowls for easy access.
Skewer the ingredients onto the wooden skewers in various arrangements. Repeat this process until the skewer is filled to your desired capacity. Arrange on a serving platter and drizzle with the balsamic sauce. Serve with the Radish Greens Pesto, recipe will follow; a loaf of crusty bread, and a crisp salad!

Tips and Variations:
Experiment with different types of olives to add more variety to your skewers. Kalamata olives or stuffed olives (with garlic, almonds, or blue cheese) can offer unique flavors.
If you prefer a spicier kick, substitute the mild pepperoncinis with sliced jalapeños or cherry peppers.
If you’re making these skewers ahead of time, refrigerate them until serving. Just be sure to remove them from the refrigerator a few minutes before serving to allow the flavors to come alive.
