Ingredients
1 lb spicy sausage
1/2 jalapeno, chopped
1 small onion, chopped
3 cloves of garlic, minced
2 tsp cumin
2 tsp coriander
2 tsp chili powder
2 tsp paprika
1/4 – 3/4 c heavy cream, depending on your preference
1 lb linguine
chopped cilantro
crumbled cojita cheese
Instructions
Sautee onion and jalapeno in olive oil, until tender. Then add sausage. Meanwhile, bring a large pot of water to a boil, add pasta, cook al dente.
Cook sausage until almost done and add garlic, along with all the seasonings. Finish browning the sausage.
Add corn to the sausage and cook until heated through. Add heavy cream and bring to a gentle simmer. Add pasta and toss together. Top with cilantro and cojita cheese when serving.
