Spicy Black Beans

Description

A spicy take on black beans.


Ingredients

Scale

1 big onion, diced

3 cloves garlic, minced

2 chipotles in adobo

2 teaspoons coriander

1 teaspoon salt

1 teaspoon pepper

¼ teaspoon cinnamon

2 teaspoons cumin

2 teaspoons cinnamon

1 lime, juiced

2 cans black beans, drained and rinsed

1 jalapeno, thinly sliced

Cotija cheese, crumbled


Instructions

Heat olive oil in a saute pan and cook the onions until soft and translucent. Add the garlic and

chipotles and saute until fragrant. Add the seasonings, lime juice, and the beans and work

them into the onions, until the beans begin to break down and everything is heated through

and softened. Remove, top with sliced jalapenos and cotija cheese and serve.
