Description
Shaved Brussels Sprouts and Charred Corn Salad with a Jalapeno Tomatillo Dressing! 🔥🌶️ It’s a total flavor explosion that’ll make your taste buds dance!
Ingredients
1 lb Brussels sprouts, shaved on a mandolin or in the food processor
4 ears of Corn
3 radishes, minced
4 Scallions, chopped
½ cup Cotija cheese, crumbled
½ bunch Cilantro, chopped
2 limes, for serving
For the Dressing:
5 tomatillos, husk removed and halved
½ onion, roughly chopped
1 small bunch cilantro
3 garlic cloves, peeled and roughly chopped
2 jalapenos, roughly chopped
4 limes, juiced
1 teaspoon cumin
Kosher salt and pepper
6 tablespoons Olive oil
Instructions
Thinly slice the Brussels sprouts using a mandolin or a food processor and place in a large serving bowl. Preheat a gas grill on medium high (or you can use your gas stove but be careful the corn will spit somewhat) and grill the corn. Cook until charred and nicely blackened, 2-3 minutes per side. Remove from the grill and set aside to cool. Once it’s cooled, cut the kernels off the cobs and add them to the bowl with the brussels sprouts. Add the minced radishes, and scallions; and toss to combine. Add the cotija cheese and gently toss again.
In a blender, add the tomatillos, onion, cilantro, garlic, jalapenos, lime juice, cumin, salt and pepper, and olive oil. Blend until smooth. Add the dressing, ½ at a time, so as not to overdress the salad. Toss gently. Finish with cilantro and squeeze the limes over the top and serve!
