Ingredients

½ red onion, thinly sliced

¾ cup cherry tomatoes, halved

¼ cup Giardiniera, drained and finely diced

½ jar roasted red peppers, drained and thinly sliced

8 slices hard salami, cut into strips

8 slices turkey, cut into strips

8 slices pepperoni, cut into strips

8 slices peppered salami, cut into strips

8 sliced provolone, cut into strips

¼ cup Italian parsley, chopped

½ small head iceberg lettuce, roughly chopped

Croutons, optional

For the Dressing:

¼ cup olive oil

3 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 ½ teaspoons dried oregano

½ teaspoon salt

½ teaspoon garlic powder

¼ teaspoon black pepper

pinch of red pepper flakes

Directions

Into a large serving bowl, add the red onion, cherry tomatoes, diced giardiniera, and roasted red peppers.

Then add the hard salami, turkey, pepperoni, peppered salami, and provolone, and toss to combine.   In a glass measuring container, whisk all the dressing ingredients together until well emulsified.  Pour over the salad, tossing gently to combine.  Then add the parsley and iceberg lettuce and fold gently.  Add croutons, if using, and serve.

Toss the salad gently to ensure that all the ingredients are evenly coated with the dressing. Be careful not to overmix, as you want to maintain the integrity of the salad’s ingredients.

Serve your grinder-inspired salad in individual bowls or on a platter for a family-style meal. It’s ready to be enjoyed immediately!
