🦃 Gobble Gobble, friends! 🍁 Thanksgiving is just around the corner, and I’m bringing some serious deliciousness to the table with my Sweet Potato Casserole! 🥘🧡 Trust me, this isn’t your average casserole – it’s a full-blown party in your mouth that’s about to steal the spotlight at your feast! 🎉


Ingredients

Scale

3 cups sweet potatoes, peeled, cooked and mashed (yams work as well)

1 cup sugar

½ cup heavy cream

1/3 cup butter, softened

2 eggs

2 teaspoons vanilla

Pinch of salt

For the Topping:

1 cup brown sugar

1/3 cup butter, cold, cut into cubes

1/3 cup flour

1 cup slivered almonds

1 cup coconut


Instructions

Preheat oven to 350F.  Butter a casserole dish and set aside.  Mash the sweet potatoes.  Add the sugar, heavy cream and butter, and continue mashing to combine.  Lightly beat the 2 eggs, then add to the mixture and whisk them in.  Add vanilla and pinch of salt and whisk to combine.  You can also use an electric hand mixer at this point, if you want them really smooth.  Pour into the prepared baking dish.

Make the Topping:

Using a pastry cutter, combine the brown sugar, butter, and flour, until it is small chunks. Add the almonds and coconut, tossing to combine.  Sprinkle topping over the sweet potato mixture and bake for 30 minutes.  Indulge!
