Anything with the word “stuffed” is immediately a huge hit at my house. Stuffed crust, stuffed pasta, stuffed vegetables… You name it. These stuffed jalapenos were no exception. I had barely taken them out of the oven when they were devoured! Perfect for parties, holidays, or just a fun appetizer to hold people over before dinner!

Cheesy stuffed jalapenos.
Ingredients
1 8oz cream cheese, room temperature
1 cup mayonnaise
1 cup parmesan cheese, grated
1 cup sharp cheddar cheese, grated
1 4 oz can green chiles
1 can artichoke hearts (in water), chopped
1 jalapeno, minced
6 jalapeno peppers, halved with the seeds removed
Instructions
Preheat oven to 350*.
In a large bowl, mash the cream cheese and mayonnaise together. Add the parmesan cheese, cheddar cheese, and green chiles; and stir well, to combine. Add the chopped artichokes and minced jalapenos and mix well to thoroughly incorporate. Fill each half of the halved jalapenos with a couple of tablespoons of the mixture. Place in a baking dish and bake at for 20-25 minutes. Then broil for 3-5 minutes on low, to brown the cheese. Remove and serve.
Notes
If there is extra mixture left, after you fill the jalapeno halves; simply put it in a buttered baking dish and bake it along with the jalapenos. It is GREAT, served with tortilla chips!
