Honey Whiskey Orange Cake

Description

This decadent cake combines my love of Kentucky Butter cakes, and Kentucky Whiskey.  I mean, who doesn’t love an ooey, gooey, buttery cake; and when you add notes of honey, orange, and whiskey…………OMG!  Try this one, and I guarantee you’ll thank me later.


Ingredients

Scale

1 cup butter, softened

¾ cup sugar

¼ cup honey

1 c brown sugar

4 eggs

1 T vanilla

¾ cup almond milk

¼ cup whiskey

Zest and juice of 1 orange

3 c flour

1 t salt

1 t baking powder

½ t baking soda

Glaze:

½ cup sugar

¼ cup honey

Zest and juice of 1 orange

2 T whiskey

2 t vanilla

1/3 cup butter

Pinch of salt

Whipped Topping:

Heavy cream

¼ cup sugar

Zest of 1 orange


Instructions

Preheat oven to 350*.  Butter and flour a bundt pan.

Cream butter, sugar, honey, and brown sugar together until light and fluffy.  Add the eggs, one at a time. Mixing well after each addition.  Add vanilla.  Mix almond milk, whiskey, and orange juice with zest in a bowl and set aside.

In a separate bowl, sift together the flour, salt, baking powder, and baking soda.  Alternate adding ½ the dry ingredients to the sugar mixture, then ½ the almond milk mixture.  Mix, just until combined.  Then add the remaining dry ingredients and remaining milk mixture.  Mix well.  Pour into the prepared pan and place on a baking sheet.  Bake for 50-65 minutes, or until a toothpick comes out clean.

When there is about 10 minutes of baking time left, make the glaze.  Combine all the glaze ingredients in a sauce pan and bring to a simmer.  Stir continuously, until the sugar dissolves and the butter melts.

When the cake comes out of the oven, use a knife and poke holes all over the top of the cake.  Pour the glaze evenly over the tope and set aside to cool completely, before inverting.

Whip the cream with the sugar and orange zest, until stiff peaks form.  Serve with cake.
