Description
Pumpkin spiced cookies.
Ingredients
½ cup butter, softened
1 cup brown sugar
½ cup sugar
1 cup pumpkin puree
1 egg
2 teaspoons vanilla
2 ½ cups flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1 ½ cups semi-sweet chocolate chips
Instructions
Preheat oven to 350F. Line 2 baking sheets with parchment paper. In a stand mixer, or with a hand
mixer; cream the butter and sugars together, until light and fluffy. Add the pumpkin and egg, and beat
again, then add the vanilla and mix in well. In a separate bowl, sift the flour, baking soda, baking
powder, salt, cinnamon, nutmeg, and ginger together. Pour into the wet ingredients, and mix on low;
just until combined. Add the chocolate chips and fold in. Drop by spoonfuls onto the parchment paper.
Bake for 15-20 minutes. Cool.
