
This is my husband’s favorite time of year because eggnog is finally back on the shelves. I didn’t know this, but my son-in-law also loves eggnog. So when I asked the family for cookie recommendations, my son-in-law responded with, “Can you create an eggnog cookie?” Challenge accepted!

Eggnog Cookies
Description
Soft, delicious cookies that taste just like a glass of eggnog.
Ingredients
Cookies:
3/4 cup butter, softened
½ cup sugar
3 egg yolks
1 teaspoon vanilla
½ cup eggnog
2 ¼ cup flour
2 teaspoon baking powder
½ teaspoon salt
pinch of allspice
½ teaspoon nutmeg
½ teaspoon cinnamon
Eggnog Frosting:
1 cup powdered sugar
1 tablespoon butter softened
2 tablespoons eggnog
2 tablespoon rum or ½ teaspoon rum extract
Instructions
Cookies:
Preheat oven to 350*. In a stand mixer, cream butter and sugar together. Add egg yolks and beat until
light and fluffy. Pour in vanilla and eggnog and beat again, until well combined. In a separate bowl, sift
the flour, baking powder, salt, allspice, nutmeg, and cinnamon together. Pour into the butter mixture
and mix on low speed until just combined. Roll 2 tablespoons of dough into balls, and place on a
parchment lined baking sheet. Using the bottom of a glass, flatten the dough slightly. (You may have to
dip the bottom of the glass in sugar so it doesn’t stick to the cookie dough). Bake for 11 – 13 minutes.
Remove and cool slightly before frosting.
Frosting:
Put all ingredients into a glass bowl, and mix well with a spoon. Frost cookies after they have cooled completely.
