Ingredients
1 chicken, spatchcocked
1 teaspoon cayenne
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
1 teaspoon black pepper
1/4 cup balsamic vinegar
3 limes juiced
1/4 cup brown sugar, lightly packed
4 cloves garlic, minced
2 large jalapenos, cut into 1/4 inch slices
Cilantro, chopped for serving
Instructions
Preheat the oven to 425F. Pat your chicken dry with some paper towels and set aside. Whisk the cayenne, smoked paprika, garlic powder, onion powder kosher salt and black pepper together; and then rub it all over the chicken, flipping the chicken over and rubbing it on the back side as well. Place the chicken in a large cast iron skillet or large oven safe skillet and roast for about 45 minutes, until the internal temperature is 160F.
Meanwhile, in a saucepan, over medium-high heat, add the balsamic vinegar, lime juice, brown sugar, and minced garlic; and bring to a boil.
Once boiling, add in the sliced jalapenos. Continue to boil until the sauce has thickened and reduced. Pour the sauce through a strainer, reserving the jalapenos.
When the chicken is done, remove from the oven and cut the chicken into 10 pieces (cut the breasts in half). Place on a serving platter and drizzle with the reduced sauce. Place the cooked jalapenos on the side (they are delicious!!!), and sprinkle the chicken with cilantro. Enjoy!
