This delicious chicken is seasoned, and seared to a golden brown. Combined with jalapeno and garlic; seasonings, lime juice, cilantro, and rice; and then simmered until aromatic, juicy, and tender. The prep time is minimal, and the dish comes together in under an hour; making a perfect weeknight meal for busy families!

Cilantro and lime flavored chicken with a pop of jalapeno of flavor!
Ingredients
4–6 boneless skinless chicken breasts, pounded to even thickness
Olive oil
1 ½ teaspoons garlic powder
1 ½ teaspoons onion powder
½ teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon pepper
2 garlic cloves, minced
1 jalapeno, minced
2 cups uncooked white rice
3 limes, juiced
2 ½ cups chicken broth
1 15oz can coconut milk
2 tablespoons brown sugar
1 teaspoon fish sauce
Scallions for serving
Cilantro, chopped for serving
Instructions
Stir together garlic powder, onion powder, cayenne pepper, salt, and pepper. Season chicken with half of the seasoning mixture and set remaining seasoning aside.
Drizzle a pan with oil over and bring to medium heat. Sear chicken 2-3 minutes on each side until nicely browned. Remove from pan.
Drizzle a little more oil, saute the garlic and jalapeno until softened.
Add rice, remaining seasonings, chicken broth, coconut milk, brown sugar, fish sauce, and lime juice to pan and stir to combine. Return chicken to pan on top of the rice. Cover and cook for 20-25 minutes until liquid is dissolved.
Fluff the rice with a fork. Top with scallions, cilantro and squeeze fresh lime juice over the top. Serve immediately.
