Garlicky Smoked Paprika Chicken

A combination of garlic and smokey flavors.


Ingredients

1 3 ½ – 4 lb roasting chicken

3 teaspoons granulated garlic

2 tablespoons smoked paprika

1 teaspoon dry mustard

1 teaspoon coriander

1 teaspoon dried oregano

½ teaspoon red pepper flakes

1 teaspoon salt

½ teaspoon black pepper

¼ cup butter, melted


Instructions

Preheat oven to 425*. Prepare the chicken by patting it dry with a paper towel. A dry chicken will brown much better! Mix the garlic, paprika, dry mustard, oregano, red pepper flakes, salt and pepper together in a small bowl. Sprinkle it all over the chicken and rub it into the bird. Place the chicken on a roasting rack, on a rimmed baking sheet; and roast for 45 min to 1 hour 15 min; until the internal temp is 165*. Halfway through, brush the chicken with the melted butter.

Remove from the oven, cover the chicken loosely with foil, and let it rest for 10 minutes before carving.
