Ingredients
Orange Rolls:
1 orange, juiced
1 – 1 1/4 cups milk (enough to combine with the orange juice to make 1 ½ cups total)
1 package yeast
6 tablespoons butter, melted
½ teaspoon vanilla
1 teaspoon salt
½ cup sugar
1 whole egg
1 egg yolk
3–5 cups flour
Filling:
1 stick butter, softened
¾ cup brown sugar
3 tablespoons orange zest
Frosting:
4 oz cream cheese, softened
14 tablespoons butter, softened
Zest and Juice from 1 orange
3 cups powdered sugar
Pinch of salt
Instructions
For the dough:
Bloom the yeast in the warm milk, with a teaspoon of the sugar. Meanwhile, In the bowl of a stand mixer, combine the salt, remaining sugar, and 3 cups of flour. When the yeast has bloomed, add the cooled melted butter, vanilla, egg, and egg yolk to it, whisking gently; then add that to the dough in the stand mixer. Using the dough hook, mix until the flour is completely incorporated, about 4-5 minutes. Add another ½ cup flour and work it in. If the dough seems too sticky, add the remaining 1 ½ cups of flour, just a little at a time. This dough is meant to be on the softer side.
Cover and let rise until double in size. Meanwhile, grease a 9×13 pan, or line with parchment paper.
On a floured countertop, roll the dough into a rectangle that is approximately 10×17. Spread the softened butter over the dough and sprinkle with the brown sugar and orange zest. Starting with the long edge, roll the dough, keeping it as tight as you can, without stretching it. Pinch the seam to seal. Using a sharp knife, cut into 12-15 even pieces. Place them into the prepared pan; cover and let rise again until doubled. About 1 hour.
Preheat oven to 350F. Bake for 25-40 minutes; you want the centers done, but you don’t want the buns dark in color; so you may have to cover them if they need longer than 30.
Meanwhile, make the frosting:
Whip all frosting ingredients together until smooth. Spread it onto the warm rolls. Top with additional orange zest, if desired.
