Chicken Bacon Ranch Pasta

Description

Bacon, chicken, ranch, and cavatappi pasta.


Ingredients

Scale

½ pound bacon, chopped

1 red onion, diced

4 cloves garlic, minced

3 ½ tablespoons ranch seasoning

1 can fire roasted tomatoes, drained

1 ½ cups heavy cream

1 pound rotisserie chicken, shredded

1 lb cavatappi pasta, or other curly pasta

1 cup shredded parmesan cheese

½1 teaspoon red pepper flakes

Parsley, chopped for garnish


Instructions

Heat a large dutch oven, to med-high heat. Add the bacon and cook until the fat renders out and the

bacon is done, but still tender. DO NOT DRAIN. Lower the heat. Add the onion and saute until the

onion is soft and translucent; add in the garlic and saute until fragrant. Sprinkle the ranch seasoning

over the mixture and work it into the bacon and vegetables. Pour in the fire roasted tomatoes and

heavy cream, and heat through. Add the chicken, and simmer, until the chicken is heated through.

 

Meanwhile, bring a large pot of well salted water to a boil. Add the pasta and cook until al dente;

according to package directions. Drain and add to the sauce, tossing to combine. If needed, add some of

the pasta water to thin the sauce.

 

Stir in the parmesan cheese. Serve hot, with parsley for garnish.
