Summer is for bbqs, family get togethers, parties, and delicious food. Wouldn’t you agree? I don’t know about you, but a common food served at our family bbqs is hamburgers or some sort of sandwich. They’re just perfect for the season! I wanted to make something new for my family, while also sticking with the tradition of a quick dinner for a summer bbq. These sandwiches were devoured! I’m sure your family will love them, too!

Ingredients
For My Hawaiian Pulled Pork
1 red onion, thinly sliced
4 lb pork sword
1 tablespoon onion powder
2 teaspoons kosher salt
2 teaspoons garlic powder
1 teaspoon black pepper
1 tablespoon paprika
½ cup chicken broth
1 cup pineapple juice
¼ cup hoisin sauce
1 cup garlic chili sauce
¼ – ½ cup brown sugar
¼ cup low sodium soy sauce
½ inch fresh ginger, grated
Hamburger buns
For My Sweet and Spicy Slaw:
Napa cabbage, thinly sliced
4 scallions, sliced diagonally
2 tablespoons canola oil
1 tablespoon fresh ginger, grated
2 teaspoons garlic, minced
¼ cup rice wine vinegar
2 teaspoons sugar
1 teaspoon celery salt
1 teaspoon red pepper flakes
Salt and pepper
Instructions
For the Pulled Pork:
Place the onions in the bottom of a slow cooker. Pat the pork roast dry and set aside. In a small bowl, mix
the onion powder, salt, garlic powder, pepper and paprika. Rub the mixture into the pork and lay it on top of
the onions. Cook on high for 2 hours, then reduce to low, continue cooking for 4 hours.
When done, transfer the pork to a large pan, and shred, removing any large pieces of fat. In a glass
measuring container whisk the chicken broth, pineapple juice, hoisin sauce, garlic chili sauce, brown sugar,
soy sauce, and fresh ginger together, then whisk it into the broth in the crockpot. Put the pork back in the
slow cooker and nestle it into the sauce. Cook on low for 1 hour.
For the slaw:
Meanwhile, combine the cabbage, scallions, canola oil, fresh ginger, garlic, rice wine vinegar, sugar, celery
salt, red pepper flakes, and kosher salt and pepper in a bowl and toss to combine.
Serve the pulled pork on Hawaiian buns topped with slaw, with your favorite BBQ sauce on the side.
