Ingredients
5 lb pork loin
2 cups orange juice
1 lime, juiced
2 tablespoons honey
½ red onion, chopped
5 garlic cloves
3 chipotles in adobo
3 tablespoons adobo sauce
2 teaspoons coriander
1 tablespoon cumin
1 teaspoon salt
1 teaspoon pepper
¼ teaspoon cinnamon
½ bunch cilantro, chopped
1 jalapeno, sliced
Corn tortillas
½ red onion, thinly sliced
Pico de gallo
Cotija cheese, crumbled
Instructions
Place the pork loin in a crock pot. Combine the orange juice, lime juice, honey, red onion, garlic,
chipotles, adobo sauce, coriander, cumin, salt, pepper, and cinnamon in a blender and blend on high.
Pour over the pork. Sprinkle the chopped cilantro over the meat. Cover and cook on high for 2 hours,
reduce to low and cook for 5-6 more hours. When the meat is done, remove it; shred it with forks, and
put it back in the sauce; tossing to combine.
Serve with tortillas, jalapenos, red onion, pico de gallo, cheese, and more cilantro for topping.
