Mexican Corn and Sausage Pasta

Mexican Corn and Sausage Pasta

Nearly everything you’d expect in a taco, put into a pasta!

 


Ingredients

Scale

1 lb spicy sausage

1/2 jalapeno, chopped

1 small onion, chopped

3 cloves of garlic, minced

2 tsp cumin

2 tsp coriander

2 tsp chili powder

2 tsp paprika

1/43/4 c heavy cream, depending on your preference

1 lb linguine

chopped cilantro

crumbled cojita cheese


Instructions

Sautee onion and jalapeno in olive oil, until tender. Then add sausage. Meanwhile, bring a large pot of water to a boil, add pasta, cook al dente.

Cook sausage until almost done and add garlic, along with all the seasonings. Finish browning the sausage.

Add corn to the sausage and cook until heated through. Add heavy cream and bring to a gentle simmer. Add pasta and toss together. Top with cilantro and cojita cheese when serving.
