🔥 Bringing the Heat in the Kitchen! 🔥 Remember those mouthwatering Moroccan roasted potatoes I shared last time? Well, I couldn’t resist taking things up a notch with a little inspiration from one of the firefighters on my husband’s crew! 🚒🔥 Introducing my very own Moroccan Chicken creation, sizzling with flavors and fired up with that authentic North African flair. 🌶️🍗


Ingredients

Scale

8 chicken thighs, boneless, skinless

2 teaspoons garam masala

1 ½ teaspoons cumin

1 teaspoon turmeric

½ teaspoon cinnamon

Olive oil

1 onion, small dice

2 garlic cloves, minced

1 large bottle Old El Paso™ Salsa

¼ cup hot honey

½ teaspoon ground ginger

½ teaspoon coriander

¼ teaspoon cayenne

Cilantro, chopped for serving

Scallions, chopped for serving


Instructions

Preheat the grill.

Pat the chicken dry with paper towels and place on a tray.  In a small bowl, combine the garam masala, cumin, turmeric, and cinnamon.  Sprinkle the seasoning mix over the chicken and rub it into the thighs.

Grill the thighs until the internal temperature is 165F, turning them halfway.

Meanwhile, heat olive oil in a saute pan.  Add the onion and garlic, and cook until soft and translucent.  Add the salsa, hot honey, ground ginger, coriander, and cayenne.  Simmer until the chicken is done.

When the chicken is ready, place it on a serving platter and pour some of the sauce over the top, reserve the rest to serve alongside.  Top with chopped cilantro and serve!

This goes great with my Roasted Moroccan Potatoes.  😊
