First things first, this is a nostalgic dish from my childhood, that I’ve updated and added to, over the years.  It’s incredibly quick and convenient, using canned shrimp means you don’t have to fuss with cooking shrimp from scratch, saving you time and effort. Plus, the combination of briny olives and tangy Miracle Whip creates a flavor explosion that’ll have your taste buds doing a happy dance!

Why Miracle Whip?

Some might find the addition of Miracle Whip intriguing in a pasta salad, as the classic choice is often mayonnaise. 🏖️ Perfect for Any Occasion 🏖️ This pasta salad is perfect for picnics, potlucks, or as a quick and satisfying weeknight dinner. It’s a crowd-pleaser and can be easily customized with your favorite veggies and protein, like grilled chicken or chickpeas. 🥗


Ingredients

Scale

1 lb small pasta, cooked and cooled

1 can olives, sliced

2 cans tiny cocktail shrimp, drained

1 pint cherry tomatoes, quartered

45 scallions, chopped

½ teaspoon red pepper flakes

Kosher salt

15 oz container Miracle Whip

¾ teaspoon paprika

Parsley, chopped


Instructions

Boil pasta according to package directions.  Drain and let cool to room temperature.  In a large serving bowl, put the cooled pasta, sliced olives, shrimp, tomatoes, and scallions.  In a separate glass measuring container, put ½ of the contained of Miracle Whip, the red pepper flakes, 1 teaspoon kosher salt, and the paprika.  Whisk to combine.  Pour the dressing over the pasta and gently toss.  Chill for 30 minutes.  As it chills, the pasta will absorb much of the dressing, so you will need to add more Miracle Whip.  Remove the salad, and add additional Miracle Whip; you don’t want a dry pasta salad, add enough to make it creamy.  😊  Sprinkle with parsley.  Taste and adjust seasonings.  Serve.
