Ingredients

Scale

1 can black beans, rinsed and drained

1 can kidney beans, rinsed and drained

1 can garbanzo beans, rinsed and drained

½ red onion, small dice

2 fresh corn cobs, grilled or blackened on grill pan, kernels removed

1 jalapeno, minced

2 cloves garlic, minced

45 scallions, chopped

1 can rotel tomatoes, drained

½ pint cherry tomatoes, quartered

½ bunch cilantro, chopped

1/3 cup Balsamic vinegar

3 tablespoons olive oil

3 limes, zested and juiced

2 tablespoons sugar

Kosher Salt, to taste

Tortilla Chips for serving


Instructions

Instructions: In a large bowl, combine the beans, red onion, corn kernels, jalapeno, garlic, scallions, rotel tomatoes, and cherry tomatoes. Toss gently to combine.

In a small bowl, whisk together the balsamic vinegar, olive oil, lime zest, lime juice, sugar, and salt.  Drizzle the dressing over the bean mixture and toss again until well coated.

Sprinkle fresh cilantro leaves over the top for an extra burst of freshness and color.  Serve with tortilla chips or eat as a salad.

 

Notes

When you’re ready to serve, give the salad a final toss and garnish with a sprig of fresh cilantro. The coolness of the beans, combined with the spicy kick of the jalapenos, the tangy balsamic, and the zesty lime, will make this dish an instant crowd-pleaser.
